Our visit did not disappoint! The atmosphere, busy as one might expect in a Florentine trattoria, yet quiet enough to savor the full experience of the five-star restaurant. The dining room’s centerpiece, a large window into the meat cooler, giving guests a glimpse into the aging process that defines the restaurant’s commitment to quality. Throughout the evening, staff venture into the cooler, retrieving sides of beef to be cut to order.
Given the trattoria’s popularity, we anticipated a long wait, so we visited the restaurant that afternoon to see if we could get our name on the evening waitlist. The anticipation was well worth it.
Service at Trattoria Dall’Oste was nothing short of extraordinary. The staff tended to our every need, adding to the overall experience. We started with Disarono Spritzes—a refreshing choice that perfectly complemented the warm summer evening. I mentioned to our waiter that we had seen a YouTube video featuring a chicken paté that my wife was eager to try. The waiter knew of the video and promptly brought out the paté for her to enjoy—a perfect example of the personalized service that elevates a meal from great to unforgettable.
The star of the meal, Bistecca alla Fiorentina “scottona”, a 1.3kg cut of Florentine cuisine. Chianina cattle, native to the hills of Tuscany, cooked to a flawless medium-rare, topped with flake salt; the steak, a culinary masterpiece—juicy, tender, and bursting with flavor. Each bite, a reminder of why Florence is not just a city of art, but a city of taste.
The experience was so delightful that when the owner passed by our table to inquire about our meal, I asked if he could squeeze us in the next day so that I could try the wagyu. He locked us in for another fantastic evening for dinner at 6 PM!
